Ingredients:
- Flax eggs, 1.5 batches
- Almond Milk, 3/4 cup unsweetened
- Baking Soda, 1/2 tsp
- Vegan Butter, 1/2 cup melted
- Cane Sugar, 1/2 cup
- Applesauce, 2 tbsp
- Sea Salt, 1/2 tsp
- Yellow Cornmeal, 3/4 cups fine
- AP Flour, 3/4 cup
Steps:
- Preheat oven to 350°F (176°C). Grease 8×8" baking dish.
- Prepare egg replacer.
- Combine almond milk and lemon juice. Add baking soda after several minutes.
- In large bowl, add melted butter and sugar and wisk. Add applesauce and liquid ingredients. Combine.
- Add salt, cornmeal, and flour. Stir to combine until batter has a lumpy consistency.
- Add batter to dish and bake for 30-35 minutes. Bread will be golden brown and a toothpick will pull out clean when finished baking.
