Braised Red Potatoes

  1. Arrange potatoes, halved side down, in 12 in skillet. Add water, butter, thyme and salt. Bring to boil and reduce to a simmer. Cover until potatoes are tender (~15 minutes).
  2. Discard thyme. Set garlic aside. Increase heat to medium high and evaporate water. Fry in butter for 15-20 minutes. Swirl pan until potatoes are brown.
  3. Meanwhile, crush and mince garlic. In a small bowl mix garlic, chives, lemon, salt, and pepper.
  4. Pour potatoes into a large bowl and coat with garlic mixture
