Red Potatoes, 1 1/2 lb small halved unpeeled

Garlic, 3 cloves whole

Water, 2 cups

Vegan Butter, 3 tbsp

Thyme, 3 sprigs

Chives, 2 tbsp minced

Lemon Juice, 1 tsp

Salt, 3/4 tsp

Pepper, 1/4 tsp
- Arrange potatoes, halved side down, in 12 in skillet. Add water, butter, thyme and salt. Bring to boil and reduce to a simmer. Cover until potatoes are tender (~15 minutes).
- Discard thyme. Set garlic aside. Increase heat to medium high and evaporate water. Fry in butter for 15-20 minutes. Swirl pan until potatoes are brown.
- Meanwhile, crush and mince garlic. In a small bowl mix garlic, chives, lemon, salt, and pepper.
- Pour potatoes into a large bowl and coat with garlic mixture
