Ingredients:
- Polenta, 1.5 cups
- Water, 6 cups
- Salt, 1.5 tsp
- Vegan butter, 1.5 tbsp
- Extra virgin olive oile to grill/fry
Steps:
- Preheat oven to 350°F
- Mix polenta and water in baking dish. Place on top rack for 1 hour.
- Take out of oven and mix in vegan butter. Return for 20 minutes.
- Stir again. Return until firm.
- Chill.
- Cut chilled polenta into triangles. Grill or fry.
Notes:
- Add vegan parmesan cheese (~3/4 cups) or a few tablespoons of nutritional yeast.
