Onion, 2/3 cup finely chopped

Garlic, 2 cloves crushed minced

Lentils, 2/3 cup

Taco Seasoning, 1 tbsp

Chicken Broth, 1 2/3 cup
- Heat oil in skillet over medium heat. Cook onions until tender. Add lentils and seasonings and stir constantly for 1 minute. Make space in center of pan and fry garlic until aromatic.
- Add chicken broth, cover and reduce to simmer until lentils are tender (~25-30 minutes)
- Uncover and thicken (~6-8 minutes). Mash lentils slightly.
- Versatile recipe. e.g., Replace seasoning with garam masala and serve with fried potatoes.
- Great with avacado slices, pico de gallo, fajitas, and corn tortillas.
