Lentils, 2.5 cups

Water, 6 cups

Onion, 1 large

Olive Oil, 1 tbsp

Bell Pepper, 1

Salt, 1 tsp

Pepper, 1/2 tsp

Cumin, 1 tsp

Cilantro, 1 cup

Garlic, 3 cloves

Lime Juice, 1/4 cup
- Combine lentils and water. Bring to boil. Simmer.
- Saute onions and bell peppers in oil. Briefly fry garlic. Add to soup and simmer for 15 minutes.
- Season and simmer for 15 more minutes.
- Stir in cilantro and lemon juice. Remove from heat.
