Chassis are cheap on eBay. Buy the ones the come with drive adapters and rails.
5400 RPM drives are quieter and cooler than 7200 RPM drives.
Six drives are used to initialize a RAIDz2 pool. Configure the extra drive as a hot spare.
Purchase screws with drives. Supermicro bay enclosures require non-standard screws. Bolt Depot is much cheaper than OEM: Product #9724, Machine screws, Phillips flat head, Stainless steel 18-8, #6-32 x 3/16"
.
For a silent NAS, purchase the UQ
or ultra quiet line of Supermicro PSUs. That and Noctua fans for everything result in a quiet NAS on low load.
